especially since i saw on pinterest nutella hot chocolate!
pinterest will be the death of me... any other addicts out there? though I have gotten some valuable inspiration some days for recipes.
but back to the hot chocolate; i've made frozen hot chocolate, hot chocolate pie, and microwave hot chocolate cake, so when i saw hot chocolate popovers, i just HAD to make them. of course they have to be healthy though!
3/4 cup + 2 tablespoons of white flour (unfortunately whole wheat and even whole wheat pastry would be too heavy.)
4 T buttermilk powder (such a handy ingredient, though you can sub one cup of milk for a few more calories) [and the water; one cup]
2 T truvia
1 tsp espresso powder (just do it, it won't taste like coffee, just enhanced chocolate)
1 tsp salt
1 1/2 tablespoons melted butter (i eventually want to try applesauce..) + extra for greasing pan
3 eggs
1 1/2 tsp vanilla
Pam Spray
12 marshmallows
1/4 cup of chocolate chips *or your preference
Preheat the oven to 400 degrees and grease a 12 muffin tin very VERY well, i thought my heavy coating of pam and butter would be too much and i still had some stick-age, so go crazy. grease with some butter, then spray with pam, making sure to get the sides.
Mix sifted flour, sifted cocoa powder, espresso powder, salt, truvia and buttermilk powder together. The quick, easy step of sifting makes sure that there are no lumps, so you can wisk less and not make a tough popover.
Beat the eggs, one cup of water, vanilla, and melted butter til frothy and completely incorporated. Work that forearm! Once completely beat, dump in the flour mixture and wisk til smooth. Keep the mixing to a minimum, til just incorporated and nice and smooth. It'll be milky and liquidy, but don't worry, that's the way it needs to be. I panicked a bit because it was bubbling so much and almost forming a cover, but don't worry, all is ok!
I dumped my batter into a measuring cup to add to the muffin tins, but using a glass or just straight out of the mixing bowl should work. Fill the tins 2/3 of the way full, or til you run out. Be sure to make it even or you'll have siblings whining about how so and so's is bigger than theirs.
ANYWAY
Now, here's the hard part, put the pan in the oven, set a timer to 30 minutes. and walk away. yes. just walk away. leave. don't peek. don't open the oven. just walk away. Go watch a bad tv show, reruns of america's next top model, read your bible, or make some coffee. Whatever floats your boat.. The timing for baking popovers is tried and true, so don't use that excuse.
Once they're done, turn your broiler on high and take out the pan. Dump chocolate chips on all of them and top with a marshmallow, pressing down so it stays down, don't worry about deflating them a bit. Stick the pan back in the oven and watch closely til the marshmallow is toasted. Turn off the oven and remove gently from pan.
