brown butter red velvet and some crinkles.

 so red velvet crinkle cookies have been floating around the internet for some time. i've been drooling alone in my room while combing pinterest for inspiration. but there's the whole cake mix thing. i know i know. they're convenient and great. but not for me. the whole point of baking for me is stress relief and hiding from school work so i either take as long as possible or totally get in my zone.

There's always a but. Just like with men. (Can't you tell I'm learning lessons about men from my current How I Met Your Mother obsession..?)
for anything besides cake, i love cake mix. i make dip with it. milkshakes. cookies. and more. it's kinda fun to see how many ways i can use it in besides its actual purpose. but my other rule for cake mix is that it can't be the only main flavor in whatever i make. there has to be something else going on. so this cookie was born. brown butter red velvet crinkle cookie.
i followed the base recipe from The Novice Chef save for a few things. And i love them. alot.

ingredients for 20-24 cookies:
2 eggs slightly beaten 
6 tablespoons of salted butter
1 18.25 oz box of red velvet cake mix (i used duncan hines super moist)
1/3 cup of powdered sugar
1 tsp good vanilla (i used madagascars)

preheat the oven to 375 and line a large baking sheet or two with silpat or parchment.
take a small pan and put the butter in on medium til brown. if you need further instructions see here. move to a new dish to cool to just warm. combine vanilla, browned butter and eggs. add in cake mix and stir til thoroughly combined. it might seem a little sticky but you're ok. place the powdered sugar in a shallow dish. use a springloaded dough scoop or your hands to get about a tablespoon of dough. roll in the powdered sugar til coated and complete spherical shape. place on cookie sheet and continue til the amount of dough you want to eat is left. bake for 8-10 minutes or til the edges are beginning to set. cool and devour.
