Ok ya'll, if you read
this post about buckeyes I'm hoping you've been waiting for buckeye cupcakes. If not, get excited. there's a big big reason to be excited. the peanut butter and chocolate and extra butter and some sugar and there's also some flour and chocolate. get excited. this is intense stuff. If you can't handle it, read this anyway just to make sure. Just reading the ingredient list will make you die and go to heaven.
Ready? You might wanna get your game face on and get in like a special stance or something so you don't starting jumping up and down with glee and injure someone.

Buckeyes Cupcakes for twelve

unbaked chocolate cupcake recipe for 12. (I'm planning on sharing my famous recipe soon, but I can't give away all my secrets now can I! Keep up though, it's the perfect recipe and it'll be out soon, the post is on my dash..)
Preheat your oven to the temp the recipe suggest, line your muffin pan with tan liners and put enough batter in the bottoms of the tin to cover them. Place a frozen buckeye on top and cover with batter completely. You don't want them to over flow but they need to be pretty full. I used my whole batch of batter but you might not. Bake til lightly springly and let cool.
Peanut Butter Frosting for about twelve
1/2 cup of creamy pb (you can add more if you're into that sorta thing)
1 cup of softened but still cold butter
Dash of salt
2 cups (give or take) of powdered sugar
heavy cream
Now guys, I know that's an annoying list of ingredients because you want to know how much powdered sugar exactly but that's the thing with my frostings, you've got to play with it. Beat the pb and butter til mostly smooth (ignore little chunks, that's just unsoft butter) Beat til they're very fluffy. Add in 1 cup of powdered sugar and beat again. Add the next cup give or take depending on how thick you want your frosting. If you wanted to schmear it on the cupcakes, it could be looser than if you're piping it on. Keep adding powdered sugar as needed. You can use heavy cream to loosen it up if you have to. Beat for 5 minutes on medium high and then on low for a minute to get the big air bubbles out. Pipe on top of your cupcakes and top with a mini buckeye from the earlier batch.
