chocolate chip cookie dough whoopies. yes you read that right. if you've met me, you understand my love for whoopie pies. or if you read my blog. that too. (speaking of that, im about to do some awkward self promotion so just pretend this isn't awkward. im cringing. please follow my blog and join. I'd love to have ya'll around. I love comments and questions and all that jazz. Thank ya'll so much!) i just like the whole cookies cake frosting business. so when a saw recipes for cookie dough frosting floating around. uh, duh. why wouldn't i put that into a chocolate whoopie pie! awesome. so so awesome.
Just make a batch of chocolate whoopie pies from this recipe and let cool.
While they're cooling make the following frosting. It's awesome. Seriously. Bomb. Especially refrigerated.
Chocolate Chip Cookie Dough Frosting
Ingredients:
2 sticks of softened butter (I was missing two tablespoons and subbing a tad bit of shortening was alright.) Add 1/2 tsp salt if unsalted butter.
3/4 cup of brown sugar
1/3 cup of white sugar
2 tsp vanilla
2 cups flour
1 cup confectioners sugar
1/3 cup milk or cream (as needed)
1 cup mini chocolate chips (the most important part!)
1/2-1 tsp butter extract (optional)
Beat butter and sugars together til fluffy.
Add in the vanilla and butter extract and beat again. Add the flour and half the milk til creamy.
Mix in the rest of the sugar and dribble milk til the frosting is a pipe-able consistency.
Fold in your chocolate chip and pipe onto one cookie and top with another.
Refrigerate leftovers. I HIGHLY recommend putting the sandwiched cookies in the fridge. The filling becomes so much more like cookie dough & is amazing. I recommend it so much in fact that it verges on demanding you. But i'll be nice and ask pleasantly..
