classic whoopie pies. THE classic whoopie pies.

 so i read amish books alot, the beverly lewis ones are bomb. they're seriously amazing. the plot is so intense while still being wholesome and beautiful. The nellie fisher series' main character nellie is a baker and im obsessed. she writes about all these amish delicacies that i remember from trips up to my grandparents in pennsylvania. i seriously love amish food, it's a little more creative than german food but so fresh and homey. i like amish people. step off. She writes about these pumpkin whoopie pies and i can totally imagine what they taste like because i know what a real live awesome perfect authentic whoopie pie tastes like. they're great.

Ok guys. I love whoopie pies. I do. I love the cakey cookie-ey frosting-y sweet goodness that is a perfect whoopie pie.
When there's so little and the few classic flavors going on, everything has to be spot on or it's lackluster. this is one dessert you'll remember. chocolate and vanilla. cake and frosting. it's gotta be perfect so this is it. 

Chocolate Whoopie Pies for 15-25 pie depending on size.
1 3/4 cup all-purpose flour
2/3 cup dark chocolate cocoa powder (hersheys)
1 1/2 tsp baking soda
dash of salt
4 T room temperature salted butter
4 T shortening (obviously vegetable) 
3/4 cup packed brown sugar
1 room temperature egg
2 tsp vanilla
1 cup room temp milk (fat free works)

Preheat oven to 375 and line baking sheets with parchment. Sift together flour, cocoa, baking soda and salt. Cream butter, shortening and sugar til super duper fluffy. Add in egg and vanilla and mix thoroughly. Add half the milk and mix. Add half the flour and mix. Add remaining milk and mix. Add flour and mix lightly til combined. Using a springloaded little thingy. What are they called? spring loaded scoop? scooper? scoopdeedoo? Whatever. Use about a tablespoon or two of batter evenly spaced 2 inches apart. Bake for 10 minutes or til they spring back nicely like a cake would. Cool for 5 minutes and move to a wire rack. Cool completely and frost with desired filling. 

Vanilla Whoopie Pie Filling 
2 sticks softened butter
1/4 cup shortening
1 tsp good quality vanilla
2-4 T heavy cream
Powdered Sugar

Beat the butter and shortening together for a while till light. Add vanilla and beat again. Add powdered sugar until thick. So unspecific. I eyeball my frosting but I'd guess two cups? I don't know. Just go with it. Add two T cream and beat for a while. Check consistency and add more cream if needed, I needed 3 but you might not. Go with the flow. There's always more confectioners sugar and cream. or worst case you can sandwich butter inbetween and be totally ok. i wouldn't mind. who cares what everybody else thinks. pfffffft. pipe inbetween two cookies and smusch together. devour the pillowy cloud of omnomnom. repeat until gone.
you can also fill with cookie dough frosting!
