*notice* i took these pictures early morning before they were devoured so excuse the terrible lighting and the photo laden post..
my poor mother. all three of us kids have school. at different schools. at different times. and different dates. with different breaks. they should invent a house car for her to live in for all the driving. maybe a camper would suffice? anyway, yeah. what's up with all that..
ME on the other hand, it's awesome for me! i get to make three "first day of school" breakfasts and three "first day after school"
and duh, cake batter all the way. don't act like you didn't know this was coming. who likes cake batter more than me?
um no one! so this is a hinged post if that makes sense. does it? hinged? anyway, there are two. two posts. so watch out. and guess what else we're celebrating? HELLO. oreo's 100th. yeah, im a little late to the party but i like parties so step off.
part one, get excited, get out your sprinkles and stay in your forgiving elastic pjs because it's cake batter french toast time kids! oh and you should probably get out your kids too. they'll come in handy to beg at your feet for scraps.
Cake Batter French Toast for 4 (two slices a piece)
8 thick slices of bread (wonder bread works in a pinch)
4 extra large eggs or 5 small eggs
1/2 cup or more milk
3/4 cup yellow cake mix
butter or cooking spray
sprinkles
glaze (recipe below)
If your bread isn't day old or crunchy, toast in the oven or toaster til lightly golden. Beat the eggs and cake mix together til combined, sifting the cake mix if it's lumpy. Add in 1/2 cup milk and beat together, adding more if the batter is too thick. pour batter into a thin and flat dish if possible. Lay bread slices in the batter, dipping both sides and let soak til nearly soggy with batter. Heat large skillet and grease with butter. Place slices of battered toast in hot pan, top with sprinkles and cook til browned. Flip and repeat til you can flip no more.
Cake Batter Glaze
1 cup confectioners sugar
2 T melted butter
dash of vanilla
milk or cream
sprinkles
Combine your melted butter, vanilla and sugar til a thick paste forms. it may seem a little separated but just go with it. add milk til your proper consistency is achieved. add in sprinkles (a no brainer) and top french toast! YUM. who needs syrup am i right?
stay tuned for the second half of this cake batter craziness. that's where we'll get to the oreo part of the situation!
