birthday cake oreo whoopie pies

when i have a bad day, i bake.
when i have a really bad day, i bake weird things.
and when I'm just inconsolable, i bake weird things inside of other things.

i don't know what was going through my mind but apparently crying causes temporary genius in my culinary brain.
But I'm okay, I got through what I was dealing with and I ended up with some awesome whoopie pies to share with you.

Whoopie pies with hunks of birthday oreos inside.
Sprinkles on top.
Sprinkles in the buttercream and oreos crumbs ontop. don't tell me you don't need this right now,
cause you do!

Birthday Cake Oreo Whoopie Pies {makes about 17 pies}
Ingredients-
1 3/4 cup all purpose flour
2/3 cup cocoa powder
1 1/2 tsp baking soda
dash of salt
4 TBSP butter {softened}
4 TBSP shortening
1/2 cup + 2 TBSP white sugar
1 egg
2 tsp vanilla
1 cup milk
1/2 package of cake batter oreos
sprinkles

Directions:
Preheat the oven to 375 and line two baking sheets with parchments. 
Sift together your flour, cocoa, baking soda, and salt. Set aside.
Cream the butter, shortening and sugar til fluffy and nice. Add in the egg and vanilla and beat until creamy again.
Mix in the half the mix, then half the flour. Stir to combine. Add in the remaining liquid and flour and stir to combine.
Chop the oreos roughly and stir into the batter.
Use a springloaded scooper to drop tablespoons of batter onto a cookie sheet. Sprinkle tops with sprinkles.
Bake for 10 minutes or til they spring back nicely like a cake would. Let cool for two minutes and remove to a wire rack til completely cooled.

Whoopie Pie Buttercream
Ingredients-
1 cup salted butter {softened}
2 cups powdered sugar
2 tsp vanilla
heavy cream {not fresh out of the fridge so it doesn't freeze your butter}
6 oreos {crushed}
sprinkles

Directions-
Beat the butter until fluffy as can be. Add in the powdered sugar and vanilla and beat again.
Whip in a little heavy cream a time til the buttercream is pipable consistency. 
Mix in the oreos and sprinkles until combined. Pipe between two oreo shells.
Devour.
