these have been a long time coming ya'll. i made them months ago with the intention of posting them but they weren't fantastical enough to share with you guys so i stuck it on the back burner.
then i got the notion again a few weeks ago and so i got everything ready with my little brother and then we forget that the dough in the fridge.
que this week and i have to toss it and start over.
all worth it. everything second. these are absolutely flaky beyond belief, the filling is just like poptarts and the glaze is just like toaster strudels.
i ate about three.
I got to spend some qua-li-ty time with my little baby brudda' and also eat some dough so "go me." He's in that stage now of "don't take a picture of my face" sigh. puberty. it's gonna be a fun couple years with this one.
It's super simple, make your pie dough and stick it in the fridge. make your filling, make your egg wash, drink some juice, watch some walking dead {who's with me!?} turn the oven on and then get started. roll out the dough, trim it, wash it, fill them, crimp the edges and bake em.
then you can eating them while simultaneously watching more walking dead. I'm doing that right now. please follow suit:

flakiest homemade poptarts makes 6-8
crust adapted from smitten kitchen
Pie Crust-
2 sticks of cold butter
1 3/4 cup ap flour + extra for sprinkling
1 large egg
3 TBSP cream
1 TBSP sugar
1/4 tsp salt
Filling-
1/2 cup brown sugar
2 TBSP flour
1 1/2 tsp cinnamon
dash of vanilla
optional nutella
Egg wash
1 egg yolk (you'll have extra if you make pavlova...)
dash of milk
Glaze-
3/4 cup confectioners sugar
milk
1/4 tsp clear vanilla
Directions-
For the crust-
Sift together the flour, sugar and salt.
Cut in one stick of butter with a pastry cutter until small sized. Cut in the second on right after until no bigger than the size of good pearl earrings.
Whisk together the egg and cream and stir into the dough until combine. Turn out and knead gently until it comes together. Cut in half, shape into squares. Wrap in plastic and refrigerate/freeze until needed. Keeps in the fridge for 2 days.
For the filling-
Stir together the sugar, flour, cinnamon and vanilla. Set aside.
For the egg wash-
Whisk together the egg yolk and milk. Set aside.
For the glaze-
Wisk together the confectioners sugar with a 1/2 tbsp of milk and the vanilla until smooth. Add more milk until it's thick but still pourable.
Assembly-
Bring your pie crust to room temperature.
Roll out one square of dough on a floured surface until it's 9x13. Trim the edges with a pizza cutter so they're all nice and fancy and smooth. I cut rectangles that were 3x4 for my poptarts but whatever you like. {omg. mini poptarts. revelation. dead.}
grease a cookie sheet. Place one side of the poptart crust on the sheet. Brush the entire thing lightly with egg wash. sprinkle the filling until 1/4 inch from the edge. Top with another crust. Pinch the edges with the tines {is that a word?} of a fork and prick 3 holes into the tops. Brush the tops with the egg wash to make them all golden and lovely.
rinse and repeat until you've finished the rectangle of dough.
Get out your other dough and do the same.
bake each at 350 for twenty minutes til golden on the edges. mmmmm
Let cool briefly and pour all over with the yummy glaze... devour. keeps well for up to two days. reheat as needed.
