strawberries and cream scones

hello my lovelies! sorry to have been to mia lately. between work and school and friends, i've barely breathed in days. i've been making food of course but even that's been a struggle because of my schedule and it's killing me. all i wanted to calm me was one of those strawberries and cream starbucks milkshakes.
they arent milkshakes you say? i beg to differ. as a kid, i never drank coffee {and still don't} so i always ordered the coffee-less fraps. it's basically cream, ice and flavoring. a milkshake. let's not argue.
 The strawberries and cream one of course. sucking down the creamy, sugary delicious that is all the add-ins of starbucks. sigh.
these scones reminded me of the nostalgic fraps. mainly because I haven't had one in years. now that i buy my own foods and such, i can not longer afford the starbucks franchise so this was lovely to stick in my mouth.
The juicy strawberries, the flaky cream taste of the scone. so delish.
Strawberries and Cream Scones makes 8
Ingredients-
2 cups + 2 TBSP flour {i prefer gold medal for scones}
1 TBSP baking powder
1/2 tsp salt
2 TBSP sugar
6 TBSP cold butter {sliced}
1 cup heavy cream {cold}
1/2 cup rough chopped strawberries {if they aren't super sweet, you can macerate them with a bit of sugar real quick if you like}
1/4 cup chocolate chips {if you're into that sorta thing}

Directions-
Preheat the oven to 425 and line a cookie sheet with silpat or leave ungreased.
Sift together all the dry ingredients into a medium sized bowl.
Using a pastry cutter, cut in the butter until it's peasized chunks. {that analogy has never helped me but it's standard. I'd say more like the size of good pearl earrings}
Stir in the heavy cream until just combined. Stir in the strawberries {and or chocolate} until evenly distributed.
Dump out onto a floured surface or slab. Quickly shape into a circle. Using a knife or bench cutter, cut into 8 wedges.
Place on a cookie sheet and bake for 12-14 minutes or til lightly browned on the edges.
They'll seem a leetle underdone but that's good, makes 'em flaky and yummy.
Serve warm with butter.

  1. Wow, this sounds like something I must try! Scones are really great to eat and my family loves the "homemade" ones!
